Aquafaba ("bean water" in Italian) is the cooking liquid from chickpeas.
Aquafaba whips like egg whites and makes a great substitute for vegan cooking. You can even make vegan meringues! It also makes a great replacement for egg whites in cocktails.
We cook chickpeas for our seitan products from dried beans so we create a lot of aquafaba as a byproduct. The cost covers the container, storage, and labor.
